On my past few cruises the piano bar has been open from 9pm until 11pm (no age restriction) and then 11pm until "late" is listed as 18+. The "late" piece gives the piano bar entertainer some discretion of when to wrap up, but typically will be sometime in the midnight to 1am hour when the show wraps up. It could also go a little later depending on the entertainer.
